Apulese means Apulia region and Appassimento technique combined together, a successful marriage that has lasted over 2500 years. In this spectacular region, surrounded by the sea, there are unique pedoclimatic conditions that ensure a perfect drying process of the grapes on the vines. The process is called “appassimento” and, since it is linked to the cycle of the seasons, is a very delicate phase. The grapes are left to dry (“appassire”) under the sun for a long period of time, leading to a natural dehydration of the berries and concentration of the sugar, then they are finally harvested to give birth to extraordinary wines with an incredible smooth body and a complex structure.

Deep and intense red in colour.
A rich bouquet of dried red fruits such as currant, cherry and plum in addition to pleasant vanilla notes.

VINIFICATION: The grapes are subjected to a drying process on the plant: they are left to over-ripen (over-ripening) on the vine, and therefore harvest is delayed 10 to 30 days depending on the production area. This process allows aromas, scents and flavors to concentrate in the bunches. Then the grapes are gently pressed and fermentation starts. After few months of aging, the wine is ready to be bottled.
