Villa Cara tells the story of one of the most vocated territory for the production of wine: the Valpolicella, a land drawn by the dry-stone walls and the hillside terraces with vineyards lines spotted by olive trees and cypresses where the rural character remains strong and rooted in the culture of local people. An enchanting territory that welcomes the numerous Venetian Villas, built by the noble and wealthy families of Veneto, widespread centres of agricultural, artisan and cultural development. They were the place where poets and writers used to meet and give voice to their cultural interests, with study and meditation - the otium – sipping a glass of wine. DOC and DOCG wine from Valpolicella are unique because they come for the most part from native and original vines and also from native techniques, such as drying the grapes on racks, to obtain a majestic sublime wine like Amarone.

AMARONE DELLA VALPOLICELLA

Appellation: Amarone della Valpolicella Docg

Production area: Vineyards are south-facing, on hilly limestone slopes in the Fumane Valley.

Climate: The Valpolicella area benefits a moderate continental climate which is impacted by the Lake Garda and the Adriatic sea that are located in proximity to its western and southeastern sides respectively.

Serving temp.: 14/16 °C

Alcohol content: 15% vol

Intense red in colour.

A rich and fruity bouquet, with scents of dried fruits and spices.

Dry, warm and full-bodied, with characteristic hints of ripe red fruit and spices.

Perfect accompaniment to risottos, pot roasts, game and mature cheeses.


VINIFICATION: The individual bunches are laid one by one onto tiered mats in airy lofts, where they are dried for a few months until they loose at least 30% of their original weight. (further concentrating sugars, tannins and aromas) The dried, condensed grapes are then softly pressed and cold macerated.

Appellation: Valpolicella Ripasso Doc

Production area: Grapes are selected from the hillside slopes of the Valpolicella area.

Climate: The Valpolicella area has mostly a mild to cool continental climate that is influenced by its proximity to lake Garda to the west and the Adriatic sea to the southeast.

Serving temp.: 14/16 °C

Alcohol content: 13,5% vol

Intense red in colour.

A rich and complex bouquet, with scents of red berries.

Warm and elegant, with flavours of chocolate and spices.

Perfect with pasta dishes, games and seasoned cheeses.


VINIFICATION: Grapes are de-stemmed, then fermentation takes place at 26-28 °C - the contact with the skins lasts about 8-10 days – and is followed by racking and malolactic fermentation. The wine is then kept in stainless-steel tanks for a few months, then in contact with the Amarone skins for about 5-7 days. The wine is racked, softly pressed and one part of the wine is aged in barriques for a few months before bottling.
